All the best bits of your tangy favourite pickle, including plenty of dill, in ketchup/ relish form. Mixing equal parts gherkin relish and mayonnaise or creme fraiche to dress hot new potatoes, cooked until crushable with plenty of chopped parsley and dill.

We suggest that you leave the skins on your cucumbers, otherwise you might find that your relish lacks that green color you’d expect. They need to stay warm in the oven until you are ready to put your pickle in as this will stop the jars from cracking with the heat of the mixture.
