They enrolled me on a diploma in brewing which is a distance learning course done through the Institute of Brewing and Distilling. Most people doing this job will have done this course. It was a three-year course but I was determined to do it in two which I did. We have 34 brewers and every one of them is passionate about beer making. It gives them the means to design their own recipes and develop as brewers. Everything is manual. It’s old school brewing but on state-of-the-art kit. I brought in all the ingredients that make beer and had him try 15 beers to taste. From light to dark, non alcoholic to a 12% stout.
