The handles are ever cool, so, no worries. Its nice design as well makes it great for table servings. Its durability is, however, one of its strongest points, is its commercial grade carbon steel construction. Vollrath is an American maker of primarily commercial grade cookware. It's a thinner gauge than the Matfer Bourgeat above, so if you want a lighter pan or don't care so much about high-heat searing, it's a good choice.

For example, the ICON 12-inch carbon steel pan can handle up to 800 degrees F, and the Made In carbon steel set is oven-safe up to 1200 degrees F. Pre-seasoned pans are becoming more popular, but we've seen this more with cast iron and less so with carbon steel. Still, there are a few pre-seasoned choices out there, and you may prefer this over a pan you have to season yourself. First has a smaller flat cooking surface than some other brands: the 12-inch skillet has about 9 inches of flat surface, which isn't too bad, but less than the Matfer Bourgeat. We love Misen cookware and recommend the clad stainless over Made In (see our comparison review), but their carbon steel isn't a great option.
